Cold Weather Comfort Foods

January is here, which means only a few more months of winter weather!
The snow is still coming so we have some hearty, winter-worthy comfort foods to warm your spirits!

Classic Chicken Pot Pie


  • 1 (10.75 ounce) can Campbell's® Condensed Cream of Chicken Soup (regular, 98% Fat Free, or 25% Less Sodium)*
  • 1 (10 ounce) package frozen mixed vegetables, thawed
  • 1 cup cubed cooked chicken or turkey
  • 1/2 cup milk
  • 1 egg
  • 1 cup all-purpose baking mix


Preheat oven to 400 degrees F.
Mix soup, vegetables and chicken in 9-inch pie plate.
Mix milk, egg and baking mix. Pour over chicken mixture. Bake 30 minutes or until

Homestyle Meatloaf
  • 1 pkg. McCormick Meat Loaf Seasoning Mix
  • 2 lbs ground beef or ground turkey
  • 2 eggs
  • 1/2 cup milk
  • 1/4 cup dry bread crumbs (I use Saltine crackers)
  • Ketchup or tomato sauce for topping
Mix seasoning mix, ground beef or turkey, eggs, milk and bread/cracker crumbs in a large bowl.
Shape into a loaf.  Place loaf in a shallow baking pan or 9X5 loaf pan (I line mine with foil for easy clean up)
Top with ketchup or tomato sauce.
Bake in preheated 375 degree oven for 1 hour or until cooked through.

Macaroni & Cheese


  • 8 ounces uncooked elbow macaroni
  • 2 cups shredded sharp Cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 3 cups milk
  • 1/4 cup butter
  • 2 1/2 tablespoons all-purpose flour
  • 2 tablespoons butter
  • 1/2 cup bread crumbs
  • 1 pinch paprika


Cook macaroni according to the package directions. Drain.
In a saucepan, melt butter or margarine over medium heat. Stir in enough flour to make a roux. Add milk to roux slowly, stirring constantly. Stir in cheeses, and cook over low heat until cheese is melted and the sauce is a little thick. Put macaroni in large casserole dish, and pour sauce over macaroni. Stir well.
Melt butter or margarine in a skillet over medium heat. Add breadcrumbs and brown. Spread over the macaroni and cheese to cover. Sprinkle with a little paprika.
Bake at 350 degrees F (175 degrees C) for 30 minutes. Serve.

Chicken Broccoli Casserole
1 package boneless, skinless Chicken Breast
3 stalks Broccoli
2 cans Cream of Chicken soup
1 cup Mayo
1 tsp. Lemon Juice
½ cup shredded Cheddar for mix; ½ cup for topping
1 stick Margarine
1 sleeve Ritz crackers

1. Cook chicken breasts for 20 minutes at 400° (until done). Cut chicken into bite sized pieces.
2. Cut broccoli into bite sized pieces and steam.
3. In a big bowl combine soup, mayo, lemon juice, ½ cup cheddar & chicken ~ stir to mix.
4. In a 9x13 casserole dish put broccoli on bottom then top with chicken mixture.
5. Crush Ritz crackers, and melt the margarine. Mix the two together and spread over chicken mixture.
6. Bake at 350° for 20 minutes, take out and sprinkle cheese on top. Bake until cheese melts (about 5 minutes). Enjoy!
