SUPER BOWL SNACKS

Super Bowl Sunday is this weekend! As you prepare for the big game this year, check out some of our favorite ideas to
feed the crowd! 

CHEESE BALL BLITZ

INGREDIENTS
2 packages (8 oz.) cream cheese, softened*
1 package (8 oz., 2 cups) shredded sharp Cheddar cheese
1 tablespoon chopped pimento
1 tablespoon finely chopped green bell pepper
1 tablespoon finely chopped onion
2 teaspoons Worcestershire sauce
1 teaspoon lemon juice
1/4 teaspoon cayenne pepper or hot pepper sauce
Dash salt
Keebler® Town House Toppers® Original crackers
walnuts for decorating (optional)
DIRECTIONS
1. In large bowl combine cream cheese, Cheddar cheese, pimento, green pepper, onion, Worcestershire sauce, lemon juice, cayenne and salt. Mix well. Shape into a football. Refrigerate for 4 to 6 hours. Decorate with walnuts and pimentos, if desired. Serve with crackers.
*NOTE: Soften cream cheese in microwave at high for 15 to 20 seconds.




SPICY CHEESEBURGER DIP

Ingredients:
1lb. (16 oz.) VELVEETA®, cut into 1/2-inch cubes

1 can (10 oz.) RO*TEL Diced Tomatoes & Green Chilies, undrained

1 cup KRAFT Shredded Low-Moisture Part-Skim Mozzarella Cheese

1/2 lb. ground beef, cooked, drained

4 green onions, sliced

Directions:MIX all ingredients except onions in microwaveable bowl.
MICROWAVE on HIGH 5 min. or until VELVEETA is melted, stirring after 3 min. Stir in onions.
SERVE with tortilla chips, crackers, and assorted cut-up fresh vegetables.





PIGS IN A BLANKET

Ingredients
  • 2 tablespoon(s) butter
  • 1 large yellow onion, thinly sliced
  • 1/2 teaspoon(s) kosher salt
  • 1/4 teaspoon(s) black pepper
  • 1 egg
  • 1 (9-by-9-inch piece) frozen all-butter puff pastry dough, thawed but still very cold
  • 4 (5-inch) pork hot dogs or beef hot dogs
  • Chinese hot mustard, or other favorite mustard, for dipping
Directions
  1. Preheat oven to 375 degrees. Melt butter in a large skillet over medium heat. Add onion and cook, stirring occasionally, until soft and golden brown, 10 to 12 minutes; stir in salt and pepper. Cool, then finely chop and set aside.
  2. In a small bowl, whisk together 1 tablespoon water and egg to make an egg wash; set aside. Arrange puff pastry on a clean surface and cut into 24 triangles, each about 2 inches wide at the bottom and about 3 inches tall. Transfer to a sheet tray, cover with plastic wrap, and keep refrigerated while working on step 3.
  3. Remove a few pieces of puff pastry from refrigerator at a time, so that the rest remain chilled until ready to use. Spoon about 2 teaspoons onion onto a 3-inch end of each puff pastry triangle, then top with a piece of hot dog. Roll up, starting with hot dog end first. Along the way, using your fingers or a pastry brush, dab the puff pastry with a bit of egg wash to help seal. Transfer to a parchment-paper-lined baking sheet, seam side down.
  4. Brush pigs in a blanket thinly with some of the egg wash and bake until puffed and golden brown, about 25 minutes. Transfer to a platter and serve with mustard.





FRUIT SALSA WITH CINNAMON CHIPS

2 kiwis, peeled and diced
2 Golden Delicious apples - peeled, cored and diced
8 ounces raspberries
1 (16 oz) carton of strawberries, diced
2 tablespoons white sugar (more or less to taste)
1 tablespoon brown sugar (more or less to taste)
3 tablespoons fruit preserves, any flavor (I used strawberry)

10 (10 inch) flour tortillas
melted butter or butter flavored cooking spray

Cinnamon sugar:
1 cup white sugar
2 Tablespoons cinnamon

1. In a large bowl, thoroughly mix kiwis, apples, raspberries, strawberries, white sugar, brown sugar and fruit preserves. Cover and chill in the refrigerator at least 15 minutes.
2. Preheat oven to 350 degrees.
3.Coat one side of each flour tortilla with melted butter or butter flavored cooking spray. Sprinkle tortillas with desired amount of cinnamon sugar. Cut into wedges and arrange in a single layer on a large baking sheet. Spray again with cooking spray (not necessary if using melted butter).
4.Bake in the preheated oven 8 to 10 minutes. Repeat with any remaining tortilla wedges. Allow to cool approximately 15 minutes. Serve with chilled fruit mixture. This salsa can also be serve with cinnamon graham grackers or cinnamon pita chips. Best when made and eaten the same day otherwise the fruit gives off so too much juice and it gets runny.



 

FUDGY FOOTBALL BROWNIES

The day before the game:
Bake your favorite brownie mix, following the recipe from the box.
Using a 3- to 4-inch football-shape or other cookie cutter, cut out brownies. (Or cut brownies into football shape by hand).
Spoon Creamy Vanilla Frosting into a decorating bag fitted with a small round tip. Pipe frosting onto brownies to decorate. Let stand until frosting is set.
In a storage container layer brownies between sheets of waxed paper. Cover tightly and let stand at room temperature overnight.
