4 Candlelight Dinner Ideas for Valentine's Day

Valentine's Day is this Friday! Avoid the crowded restaurants and impress your date by cooking a delicious, candlelight dinner or dessert for two at home. Check out these 4 festive recipes:

1. Heart-shaped Pizza

1 Pizza Crust
Tomato Sauce
Toppings of your choice

1. Buy a pizza crust and cut it into the shape of a heart or form your own pizza dough into a fun heart shape. 
2. Spread tomato sauce on pizza.
3. Add pizza toppings of your choice.
4. Bake for about 20 minutes, or until crust is golden brown. 

2. Strawberry & Goat Cheese Bruschetta
2 cups Strawberries, thinly sliced
1 tablespoon balsamic vinegar
1 teaspoon packed brown sugar
2 tablespoons basil, cut into a chiffonade (plus more for garnish)
Pinch of salt
Pinch of black pepper
1/2 baguette, cut into 1/2 inch slices
4 ounces goat cheese

1. Preheat oven to 375 degrees
2. Combine strawberries, vinegar, sugar, basil, salt and black pepper together in a small bowl. Let set for 30 minutes to an hour.
3. In the meantime, place baguette slices on a large rimmed baking sheet. Bake until slightly crisp about 8 minutes. Let cool.
4. Spread goat cheese on toast and then layer balsamic strawberries over. Sprinkle with more basil. 

 3. Heart Roasted Potatoes
6 large potatoes
1/4 cup olive oil
1 tsp salt
Freshly ground pepper
2 tsp caraway seeds
1/2 tsp paprika

1. Preheat oven to 400 degrees. 
2. Line baking sheet with aluminum foil, spray with non-stick spray or brush with oil.
3. Fill a pot with about 1-2 quarts of water, add 1 tablespoon salt, bring to boil, then reduce heat to gentle simmer.
4. While water is heating, peel potatoes. 
5. Slice potatoes using a small metal cookie cutter cut out. 
6. Cook potatoes in simmering water for 3 minutes, drain potatoes and let cool slightly.
7. Combine all the ingredients for the marinade. 
8. Pour marinade over potatoes, stir and let sit for 5 minutes.
9. Spread potatoes evenly onto baking sheet.
10. Roast potatoes for 20-25 minutes. 

4. Jelly Doughnut Cake
3.5 cups all-purpose flour
2 packages active dry yeast
1 cup milk
1/2 cup granulated sugar
1/2 cup butter
2 eggs
1 tsp. vanilla
2/3 cup strawberry or cherry jelly
1 recipe cream filling

1. For cake, in a medium bowl stir together 2 cups of the flour and yeast; set aside. In a medium saucepan cook milk, sugar, butter, and 1/2 tsp. salt over medium heat just until warm. Add milk mixture to flour mixture. Add eggs and vanilla; beat with an electric mixer on low speed for 30 seconds, scraping sides of bowl. Increase speed to high; beat 3 minutes. Using a wooden spoon, stir in remaining flour. Cover surface with plastic wrap; chill 2 hours to 24 hours. 
2. Generously butter a 9x2-inch heart-shape or round cake pan. Using a buttered spatula, transfer dough to prepared pan. Cover; let rise 1 hour or until double in size. 
3. Preheat oven to 325-degree F. Bake 30 to 35 minutes or until golden brown. Cool in pan on wire rack for 5 minutes. Remove cake from pan; turn top side up. Cool completely. 
4. Using a serrated knife, split cake in half horizontally; remove top. Place bottom layer on a serving plate; spread with jelly. Spoon cream filling a top jelly; spread to edges. Place top layer on filling, cut side down. Dust cake with powdered sugar; decorate with jelly. Makes 24 servings.
